When you plant almost 35 cucumber plants you get a lot of cucumbers! Especially when about half the plants are Poona Kheera cucumbers. I heard good things about this Indian variety and it turned out to be true. These plants are prolific! I also have white cucumbers and green cucumbers. I had only about 4 plants of the green and they have produced well, but nothing like the other two varieties.
So besides cucumber salad, cucumber soup, and cucumbers eaten like apples, I decided we needed pickles! I found a recipe for refrigerator dill pickles. YUMMY! So easy, too. The recipe was for just one jar but I made 4 jars--quart jars of pickle spears. Why did I never make my own pickles before?
